Aka weeks 6-12, during which I was lost in a haze of crazy. Here are the missing weeks of the CSA share. I love how you can kind of see summer progress – the first tomato, carrots, and potatoes of the year; the changes in color; the changes in berries.
It kind of reminds me of a much smaller version of the guy who took a picture of himself every day for six years. Only more vegetables. And a lot less time elapsed. (I always wish he was smiling for the pictures – he seems so melancholy. Not like vegetables, which are decidedly cheerful.)
All this food! Where did the summer go?

Jess, I’m not surprised that you haven’t been able to post recently with everything else that’s been going on in your life (which I’ve been enjoying following on Twitter). (It’s very easy for me to enjoy it – I’m not doing the work!). I really hope things have settled down for you now.

So for veggies, I’ve found a couple things:
1) A fridge(this is the obvious one. har har.)
2) Pickling – short term or long term. Not fresh, but added nutrition and so delicious! Excellent when you have waaaay too much of something.
3) Blanching and freezing – not fresh, but again good for surplus.
The best, sneakiest thing I’ve discovered was an accidental surprise. When you grow your own veggoes, you can just leave them on the plant until you want to eat them. I have huge bunches of spinach that I would never be able to eat if I picked it all, but when I harvest in pieces and parts, I get exactly how much I want and the rest is there waiting for me!
Obviously where you live and what season it is makes a difference. Some veggies seem to last forever, others bolt or get tough or lose flavor. But for greens in particular, it doesn’t get any easier or cheaper than letting the plant do the work. A pot, some soil, and you have fresh veggies all the time.
